Homemade Guacamole

This dip is chock-full of phytonutrients, healthy fats and flavour. It’s wonderfully easy to whip up and a complements a range of dishes, from vegetable chilli to poached eggs. Whenever I serve it, I am always asked for the recipe!

Serves 4

2 ripe avocados, mashed
½ red onion, finely diced
Juice of 1 lime
15g/half a small bunch fresh coriander, roughly chopped
1 tsp chilli flakes
1 tsp sea salt

1. First mash the avocados in a bowl, then stir in all other ingredients.
2. Enjoy!

Tip: to prevent the avocado from turning brown, leave the stone in the dip prior to serving.
